Paulino Martínez is the owner of two great restaurants in Mexico city - El Parnita and Páramo. Driven to be the best taqueros - he wanted to focus on the most often looked over component of the taco - the tortilla itself. To make the best tacos you need to make the best tortillas. Specifically - he wanted to find out more about where the corn comes from. Paulino joined forces with Jesus Tornés - a chef and culinary historian from Guerrero Mexico. They set on a journey throughout Mexico together. They went to the rural villages to meet the farmers and find the ones growing heritage native corn (non-GMO corn - and Monsanto free). After that journey together they opened up Expendio de Maiz. It's a concept restaurant that replicates a rural kitchen one would find on a farm in Mexico. It celebrates the lives and traditions of the Mexican people and is an experience you don't want to miss if you're in Mexico City. In this communal kitchen - there is no menu. The food you will prepare together with them combines the freshest local ingredients of whatever is in season when you’re there. You will learn about the origen and history of all the ingredients you will cook with. Start of with the best Cafe de Olla you will ever taste. Made in a special earthenware pot and the perfect amount of cinnamon and piloncillo for sweetness. You can see how the tortilla is made and even take part in kneading the dough and putting it in the tortilla press. The experience alone is as incredible as the food. You will also notice a steady stream of chefs come in to pick up their tortilla orders. You feel as though you’ve been invited to a farmer’s home to eat and it provides you with a real connection to the food you’re about to eat.
