Offset Smoker Build: PART 10 - Collectors & Stacks & Extenders, OH MY!

Welp, there wasn't much to report on this part of the build until we did the first biscuit test. I was ecstatic about the results of that one (in hindsight I now regret not recording that test) but I had a gut feeling that there were going to end up being issues with sufficient natural draft pressure as the weather continued to warm up. It added a little extra work but I'm glad we did the gut check and ran the second biscuit test because it confirmed my suspicion. We ended up settling on making a 12” extension for the stack that can be added and removed as needed. This stack is now modular going from a standard 30" above the cook chamber to 42" above the cook chamber. Oh, and did I mention it folds? It will collapse for times when I may need to pull into an area with a lower ceiling such as for transport or storing in a small shed.
