I love the flavor of canelés, but I don't like the squishy texture!! I think there are a lot of people like that. I've created a delicious canelé that even those people can enjoy, so please give it a try✨ I've reduced the squishiness and created a rich taste. I'm confident in this product, which I made many prototypes of. 🌟Ingredients🌟Makes 12 medium-sized Cotta Canelé molds ・35g plain flour (I used Ecriture) ・38g strong flour ・130g granulated sugar ・18g butter ・A little vanilla beans ・280g milk ・2 egg yolks (38g) ・28g rum [Preparation] ・Preheat the oven to 220°C before baking the canelés. ・Spray the mold with oil (or use butter). [How to make] 1. Sift together the flours (plain flour, strong flour, granulated sugar) and place in a bowl. Mix well with a whisk. 2. Put butter in a saucepan and brown until lightly browned. When browned, turn off the heat, add the vanilla beans and milk, and heat while stirring. 3. When the edge of the pot starts to bubble, turn off the heat and let cool to about 60°C. 4. Add the liquid from step 3 to the bowl with the flour in 3 portions, mixing each time. Do not overmix as this will lead to failure. 5. Add the egg yolks and rum, mixing well each time. 6. Cover tightly with plastic wrap and leave in the refrigerator overnight. 7. Gently mix the rested dough with a rubber spatula to make it evenly mixed. (Take the dough out of the refrigerator early and let it come to room temperature (about 23°C) before baking.) 8. Strain the dough once with a strainer. 9. Pour into a mold and bake at 220°C for 20 minutes, then at 190°C for 38 minutes. (Bake times may vary depending on your home oven.) 10. Remove from the mold and eat when it has cooled slightly. (When the outside is firm and crunchy) 🥣Tips for making🥣 ・Don't overmix the dough. ・Let it sit overnight to allow the gluten to settle. ・Bring the dough to room temperature before baking. (If it takes a while to heat up, place it in a double boiler or use the oven's rise function) 🥮Tips for eating🥮 Canelés will get more and more soggy over time. If you're not going to eat them right away, we recommend freezing them as soon as they've cooled down.
