Vietnam is one of the world’s major honey exporters. Cambodia is home to wild forest honey made with zero human involvement. In this journey from Vietnam to Cambodia, we test honey for enzyme activity using the Active Honey Test. We analyze supermarket honey, honey from apiaries, and wild honey built by bees directly on tree branches in open air combs. What we discover is surprising: Honey can be raw and bioactive at the source, but by the time it reaches stores in Europe or the U.S., it may become dead.
