The Southern Italian Way to Make Potatoes and Peppers
The Southern Italian way to make potatoes and peppers! This is a rustic Italian recipe called Peperonata, made with sweet peppers, potatoes, and an agrodolce (sweet-and-sour) sauce. I filmed this while traveling through Southern Italy, where this style of peperonata is still made at home. Peperonata usually just means peppers and onions, but this version from Southern Italy also includes potatoes and a sweet-and-sour agrodolce sauce. This is a simple, budget-friendly recipe that works as a side dish, a topping for crusty bread, tossed with pasta, or served alongside grilled meat or fish. If you're looking for an authentic Southern Italian recipe that celebrates fresh summer vegetables, this one is hard to beat. INGREDIENTS: 500g (1 lb) Yukon gold potatoes, cubed 1 red bell pepper, sliced 1 yellow bell pepper, sliced 1 peperoncino (chili pepper), chopped 1 red onion, sliced 1 cup cherry tomatoes, halved Fresh basil Salt Extra virgin olive oil 1 shot DolceAgro (or 1 tbsp white wine vinegar + 1 tbsp sugar) INSTRUCTIONS: 1. Heat olive oil in a large frying pan over medium heat. 2. Add the cubed potatoes and cook, stirring occasionally for a few minutes. 3. Add the sliced peppers and the chili pepper. Stir often until softened. 4. Add the onions and the cherry tomatoes, DolceAgro, basil, and salt. Mix well. 6. Simmer until the tomatoes fall apart and the sauce comes together. 7. Serve warm with plenty of crusty bread.
