Mexican Lager Homebrew | Grain to Glass | The Good the Bad and the Chugly

Our homebrew take on the Mexican Lager was inspired by cheladas, Dogfish Head Seaquench, and Bearded Iris Forecast. Sea salt, black lime, lime juice, and Crystal and El Dorado hops create a crisp, refreshing beer-- perfect for hot days (like the one we brewed on). Homebrew Recipe: 6 gallon batch OG 1.049 11# Avangard Pilsner Malt Mash at 150F for 1 hour Water Profile: Ca 46ppm Mg 8ppm Na 41ppm SO4 53ppm Cl 59ppm 1oz Crystal hops First Wort boil 90 minutes 1oz Crystal hops boil 15 minutes 8oz Corn sugar boil 10 minutes (could add flaked maize to the mash instead) 0.5oz Sea Salt boil 5 minutes 5 Crushed Black Limes add at flameout Imperial Harvest Yeast ferment at 55 then bump up to 70 for diacetyl rest Dry Hop with 2 oz El Dorado and Lime Juice (we used 3 limes, you could add more) The Gjaerkauk Screaming Cowboy is a reference to this masterpiece    • Kirin J Callinan - Big Enough (Official Vi...   Also inspired by the works of Sergio Leone and Ennio Morricone HOMEBREWING GLOSSARY for NOOBS and the CURIOUS Mexican Lager: Traditionally, a lager beer made in Mexico. Often uses flaked maize to reduce body and add a characteristic corn flavor. Since craft brewers and homebrewers are not terribly original, adding lime and hops with lime notes has become a trend. Mash: Turning the grains into fermentable sugars through enzymatic activity that occurs at certain temperatures in the water (appx 144-160F or 63-70C) No-Sparge: The sparge is when you further rinse the sugars from your grains with more water. A no-sparge batch uses all of the brewing water at once, resulting in lower efficiency, but more pronounced malt flavor especially when using simple grainbills. It is also easier, which is great for lazy people. Hops: Nature's candy and a homebrewer's friend. Black Limes: Dried Persian Limes that give an intense lime flavor with earthy undertones. Bottling: The worst thing a homebrewer can do. Especially in the middle of a brewday. Gjaerkauk: A Norwegian brewing tradition of screaming at the fermenter when pitching yeast. For good luck and keeps the bad spirits away. Despite being part Norwegian myself (and misspelling Norwegian in the video), we did it mostly to incorporate the Big Enough gag.
