A really easy recipe for an excellent fish soup, ready in 20 minutes. Time: 20 minutes, difficulty level 3/5 Ingredients for 4 4 thawed cod fillets A handful of cleaned, thawed small calamari A handful of peeled, raw shrimp 12 ripe cherry tomatoes 300 g tomato puree 300 g bruschetta bread or loaf Salt, pepper, oil to taste Garlic, parsley, basil, chili pepper to taste Black olives to taste The thawed fish can be replaced with red bream or snapper fillets; you can also add red mullet or gurnard, or use very tender squid rings. You can also add a handful of mussels at the last minute, but if you do, don't add salt to the soup and wait until you taste it at the end. A very easy recipe. A large pot or skillet: Heat two tbsp of oil over medium heat, and toast the bread, cut into large pieces. Brown it on all sides and place it in a bowl. Same pan: 2 more turns of oil, sauté a crushed garlic clove, and add the cherry tomatoes. Add chili pepper to taste. Add the passata after 2 minutes, half a glass of water, salt and pepper, and cover. Cook for 15 minutes. Prepare the fish first. Now add basil, black olives, chopped cod, the shrimp, and squid to the sauce. Cover the lid: don't stir, just shake the pan a bit, and in 4 minutes they'll be cooked. Don't cook them any longer. I chose this combination of fish because it's the most common in supermarkets, but you can use whatever you like. Just don't buy a mixed fish cut into pieces for risotto: at least buy the fish frozen individually. Remove the lid after 4 minutes and taste for salt: adjust slightly if necessary. A drizzle of olive oil, chopped parsley, and the bread pieces on top, in any order.
