Cookbooks on Shopify: https://collardvalleycooks.shop// Cookbooks on Amazon: https://amzn.to/3Cx4xpE MASTER COOKBOOK RECIPE # 66 MARVELOUS MEATBALLS & GRAVY Ingredients: 1-1/2 lbs. ground chuck 1 tsp steak seasoning, Weber Steak n Chop 1/4 cup brown gravy mix, McCormick 2 cups milk 5-6 shakes Worcestershire sauce 1/4 tsp black pepper 10.25-inch cast iron skillet Instructions: Preheat a cast-iron skillet. Shape beef into walnut-sized meatballs and cook over medium-high heat, adding oil if needed. Season with steak seasoning and black pepper, then brown on all sides for 10-15 minutes; drain excess grease if necessary. Whisk together milk, Worcestershire sauce, and gravy mix, then add it to the skillet with drippings and cook until thickened. Cover and keep warm. Notes & Tips: A simple way to drain ground beef is to use paper towels to absorb the grease with a set of tongs. Carefully discard the paper in the trash. When searing beef in a hot cast-iron skillet, it sticks. Use a stainless steel spatula to flip, sliding it under the meatballs and scraping along the pan's bottom. This releases the beef effectively. MASTER COOKBOOK RECIPE # 642 TAMMY'S GRANNY GREEN BEANS Ingredients: 3-14.5 oz. cans of green beans, do not drain 1/8 cup cooking oil 1 Tbsp granulated sugar Instructions: This will make the best green beans you have ever tasted, but ONLY if you follow the directions carefully. Many people do not cook them down to the caramelization stage and complain that they are sweet. This is because the directions are not followed. Add three ingredients to a nonstick saucepan. Bring to a boil and continue cooking on high. When water is almost gone, the beans will begin to sizzle. At this point you must stay in kitchen to watch them closely. The oil and sugar will then begin to caramelize in bottom of pot. You will notice the sides of pot becoming brown. Once this begins, take beans, and rub them on sides of pot that has glazing. The juice from the beans will deglaze the pot. Take them off the heat after they have formed a good glaze and you begin to smell it. Put about 1/2 cup water in pot and continue deglazing so caramelization is in beans and not on pot. Smash them a little breaking them apart if desired. RECIPE FOR 1 CAN: Use 1 Tbsp cooking oil and 1 tsp sugar for every can of green beans. Always use juice from can.
