With chunks of chocolate and a salted top, they're buttery, chewy, and everything you dream of in a cookie! #compelledtocook #recipevideo #bakingvideo #bakingathome #cookiebars #cookiesrecipe #coconutrecipe #oatmealrecipe #chocolaterecipe #snackideas #snacksrecipe #kidfriendlyfood #sweetsrecipe Ingredients: 1 cup large flake oatmeal 1/2 cup all-purpose flour 1/2 cup Demerara sugar 1/2 cup shredded coconut sweetened or unsweetened 1/4 tsp baking powder 1/4 tsp salt 5 ounces milk chocolate, coarsely chopped or chocolate chips 71 grams of unsalted butter, melted 1 large egg, at room temperature 1 tsp vanilla extract 1/4-1/2 tsp flaky sea salt Instructions: -Preheat oven to 350°F. Butter a 9"x 9" pan and line it with parchment so two sides overhang. -In a large bowl combine oatmeal, flour, brown sugar, coconut, baking powder and salt. Stir in the chopped chocolate or chocolate chips. -Whisk together the melted butter, egg, and vanilla in a small bowl. Pour the mixture into the dry ingredients and stir to combine. -Add the batter to the prepared pan and press out evenly. Sprinkle lightly with flaky sea salt and bake in the centre of the preheated oven for 18-20 minutes. -Remove from the oven and allow to cool for 5 minutes. Loosen the edges and move to a cooling rack using the overhanging parchment as handles. Remove the parchment and allow it to cool before cutting into bars or squares. Notes: -sweetened or unsweetened coconut will work. I've used both with similar results. -milk chocolate or semi-sweet chocolate will work.
