La Minina - Pain d’œuf au poulet

Minina is a kind of appetizer enjoyed in the Tunisian Jewish community during events and celebrations. It's a delicate dish, and generally very popular, as it's a kind of omelet with meat, very delicate. I sometimes vary the flavors and add ground cumin or fresh coriander to delight the taste buds. This dish is very easy to make, so don't miss out. I still recommend leaving it covered in the refrigerator for 24 hours before enjoying it with lemon juice! Ingredients: 14 raw eggs 6 hard-boiled eggs 400g raw chicken 100g hard-boiled breadcrumbs 1 tablespoon oil 1 tablespoon lemon juice 1/2 teaspoon nutmeg 60cl chicken broth Salt and pepper Start by hard-boiling the eggs. Take the chicken broth and soak the bread. Cut the chicken into small pieces. Mice it in a food processor. Separate the whites from the yolks. Wring out the soaked bread between your hands and add it to the minced chicken. Add salt and pepper to taste. Mix the bread and chicken. Add the oil, lemon juice, and nutmeg. Add the whites little by little. Mix well by hand. Preheat the oven to 180°C (fan-assisted). Adjust the seasoning. Cut the hard-boiled eggs into small pieces and add them to the mixture. Add the yolks and mix by hand. Heat water for the bain-marie. Line a mold with parchment paper and fill it up to 3/4 full. Conventional cooking: Place the mold in the bain-marie and bake at 180°C for 45 minutes to 1 hour, depending on the oven. Remove from the oven, soak the minina with the remaining broth and cover until completely cooled. Low-temperature method: Place the mixture in a bain-marie mold in an oven preheated to 90°C for 2.5 to 3 hours.
