In a real class, learn how to temper chocolate and prepare this chocolatey sweet! #NhacGNT #QueSejaDoce #LucasCorazza Ingredients: 350 g of fresh cream with 35% fat 450 g of milk chocolate 30 g of inverted liquid sugar (or glucose, in the same proportion) 500 g of milk chocolate for the shell Preparation: For the filling, in a pan, heat the fresh cream with inverted liquid sugar until it reaches 50°C. In a jar, add the hot cream and chocolate, wait for 1 minute and beat with the help of a mixer. Set aside. For the shell, melt 350g of chocolate until it reaches 50˚C, remove from the heat and add the rest of the chocolate, stirring well until it reaches 28˚C. Fill the candy molds, making a very thin layer. Place in the refrigerator and wait for it to crystallize.
