Croquettes Aux Escargots - Recette Simple & Rapide

Manoé Graftiaux, chef au restaurant "Autour du vin" nous dévoile sa recette de croquettes aux escargots ! ► Découvrir la recette http://www.omiam.tv/entrees/189-croqu... ► Notre page Facebook   / omiam.tv   ► Notre Instagram   / omiamtv   ► Notre E-Shop https://www.horecashop.net ► Les ingrédients pour 4 personnes 1 Bocal d'escargots "Petits-gris" 250gr Beurre salé 2 Oeufs entiers 1 Citron 1 càs Bicarbonate de soude 2 Gousses d'ail 1 Fond déshydraté 100gr Farine 500gr Chapelure 500gr Eau 2 Bottes de persil ► La recette ETAPE 1 Mixer les gousses d'ail, 1/2 botte de persil, le jus de citron et le beurre pommade. Assaisonner. ETAPE 2 Couper des carrés de film cellophane et placer 1/2 càs de beurre et un escargot au centre des carrés. Enrouler pour faire de petites boulettes. ETAPE 3 Placer la préparation au congélateur durant 30 minutes. ETAPE 4 Chauffer une casserole d'eau. Y verser le bicarbonate de soude et porter à ébullition. ETAPE 5 Dès ébullition, plonger dans l'eau le persil durant 5 minutes. ETAPE 6 Egoutter le persil et le refroidir dans de l'eau glacée. Mixer le tout. ETAPE 7 Passer la purée de persil obtenue au tamis bien fin. Ajouter le fond déshydraté. Faire bouillir et assaisonner. ETAPE 8 Sortir du frigo et déballer la préparation à base d'escargots. ETAPE 9 Passer les boulettes une première fois dans la farine. Ensuite, dans un mélange d'oeufs entiers et terminer avec la chapelure. ETAPE 10 Recommencer à 2 reprises l'étape "oeufs entiers - chapelure". ETAPE 11 Cuire les croquettes à l'huile bouillante en 2 fois: une première fois pour les colorer et une deuxième fois avant de servir. ETAPE 12 Garnir le fond d'une assiette avec un peu de persil, y déposer les croquettes d'escargots et décorer. Servir en entrée ou en zakouski.
