Bakewell tart (1 22cm diameter tart mold, 8 slices) -Tart dough ・Soft flour---200g ・Pinch of salt ・ Powdered sugar (icing sugar) --- 2 tablespoons ・ Unsalted butter---100g (cut into 1.5cm cubes and keep in the refrigerator until just before use) ・Egg (M)—1 piece ・Milk---1 teaspoon -almond filling ・Raspberry jam---3 tablespoons ・ Unsalted butter---100g (room temperature) ・ Castor sugar---80g ・Eggs---2 pieces ・Lemon peel---1 piece ・ Almond flour---100g ・ Sliced almonds---30g **Before baking, preheat the oven to 200℃ / 180℃ with fan / gas mark 6. 1. Beat eggs and milk in a small glass. 2. Sift together flour, salt, and icing sugar in a bowl. Add cold butter and mix by hand (the same way as when making scones) 3. Add the beaten eggs and milk and mix with a rubber spatula. Shape it into a ball with your hands, wrap it in plastic wrap, and let it rest in the refrigerator for about 30 minutes. 4. Dust with a little flour (soft flour) and roll out the dough to about 30cm in diameter (3mm thick). 5. Roll the dough around the rolling pin and gently lower it onto the tart pan. Place the tart dough along the mold and gently press it down with your hands. Roll the rolling pin over the top of the mold and cut off the excess (you can also make small tarts with the rest. You can also freeze it). If you press the dough firmly against the mold, the folds of the mold will stick firmly and prevent it from shrinking. 6. Place the mold in the refrigerator again for about 30 minutes (this also prevents it from shrinking when baking) 7. Spread a parchment sheet on top of the dough, place a weight on it, and bake in a preheated oven for 15 minutes. Then remove the weight and sheet and bake for another 5 minutes. -Make the almond filling while the tart dough is baking. 8. Place two eggs in a glass and beat. Place the butter in a bowl and soften with an electric whisk. Add the caster sugar and whisk with an electric whisk until it becomes fluffy and whitish. 9. Add the beaten eggs in about 4 times. Mix well each time. Grate the lemon zest, add the almond flour and mix with a rubber spatula. Attach a nozzle about 1cm in diameter to a piping bag, add the almond filling, and secure the nozzle. (Keep in the refrigerator until just before use) 10. Spread jam on the baked tart dough with a spoon. Pipe the almond filling from the center outwards, smoothing out the surface. sprinkle sliced almonds on top 11. Place in a preheated oven for about 30 minutes until the surface turns golden brown and the inside is cooked through, then remove from the oven. Remove from the mold while still hot and enjoy once cooled down.
