Today we're emptying the root cellar of the last potatoes and carrots we stored back in September and turning them into a rich slow-cooked beef stew. These veggies are almost 10 months old and looking rough, but you might be surprised at what's still usable. We're also whipping up easy bean wraps from the pantry, straining our beautiful pink chive vinegar, and checking out the freeze-dried garlic scape salt and kale powder we made together. After 11 years on this ranch, we've sold and we're moving in about 8 weeks, so we're eating down our food storage one meal at a time. This root cellar was built in the 1930s and it has served us so well. It won't be me filling it this fall, but I want it ready for the new owners.
