INGREDIENTS: 1 lb lean ground beef 1 cup finely diced sweet yellow onion 1 tablespoon minced garlic 1 packet of Ranch Dry Dressing Mix 1 can (16oz) dark red kidney beans undrained 1 can (14.5oz) petite diced tomatoes with juice 1 can (10oz) diced tomatoes with fire roasted hatch chilies with juice 1 cup frozen corn 1 teaspoon kosher salt ½ teaspoon black pepper ¼ teaspoon chipotle powder 1½ lbs Yukon Gold potatoes sliced ⅛ inch thick 1¼ cups Colby and Monterey Jack cheese freshly shredded ( I used sharp Cheddar in the video) Brown onion in olive oil. Add minced garlic. Cook til fragrent. Add ground beef and cook til brown. Add salt and pepper to taste. Drown excess grease. Set aside. Grease crockpot. Peel potatoes and cut into slices. Line the bottom of the crockpot with potatoes. Add 1/2 of the ground beef mixture on top of the potatoes. Add 1/2 of the ranch dressing packet. Add 1/2 the can of beans, add 1/2 the can of corn, add 1/2 the can of diced tomatoes with fire roasted chiles, and 1/2 the can of diced tomatoes. Repeat the whole process until all ingredients have been added in layers to the crockpt. Cover the slow cooker and cook on low for 6-7 hours, or high for 3-4 hours. When finished open lid and garnish the top with cheese. Close lid until cheese melts.
