For the Broth: Since the risotto is made with shrimp, it's best to use a light broth, vegetable broth, or even fish broth. You can make a simple broth: pour 3 liters of water into a saucepan, add 1 large onion, coarsely chopped, 1 celery stalk (optional), 1 garlic clove, 1 carrot, cut into large slices, parsley stalks, 1 bay leaf, 3 white peppercorns, and leek stalks (if you have them) and bring to a boil. Once it starts to boil, reduce the heat to low and simmer for about 40 minutes. You can also add the washed shrimp carcasses and boil them together, which will give them a special flavor. Then just strain and use the broth. This is a simple way.
