Ground pepper. Sugar. 1/2 apple or Asian pear. 1/2 onion. 40g mirin (rice wine) 100g soy sauce. 40g sugar. 20g honey or corn syrup. 20g sesame oil. 20g minced garlic. 2g of ginger powder. 3 to 4 pieces of green onions. ••••••••••••••••••••••••••••••••••••• PROCEDURES 1. Place the beef ribs in a tray of cold water for 30 minutes to 1 hour to remove the blood. 2. Drain the water and sprinkle sugar and ground pepper over the meat. Let it sit for 10 minutes. 3. Blend the onion, apple, and mirin (you can add a little water to make them easier to grind). 4. In a bowl, add soy sauce, sugar, corn syrup or honey, sesame oil, garlic, ginger powder, and the onion mixture. Mix. 5. Add chopped green onions. Mix. 6. Marinate the meat and let it rest for 12 to 24 hours. 7. Heat a gas or charcoal grill to medium heat. 8. Grill the ribs, turning once, to your preferred doneness, about 3 to 4 minutes per side. 9. Serve the ribs whole as a main dish, or cut into smaller pieces using kitchen shears. 10. Ready! Enjoy with white rice! •••••••••••••••••••••••••••••••••••••• TIPS Remove the blood thoroughly to avoid unpleasant odors when cooking the meat. Never grind or blend soy sauce; it slightly alters the flavor.
