Blintzes- How to Make Sweet and Savory Blintzes

Sweet and Savory Blintzes We started with a simple Crepe batter. Recipe below. 2 Cups- all purpose flour (sifted) 4 each- Fresh Eggs 1/2 tap- Salt 2 1/2 Cup- Milk 4 TBSP- Butter We combined the wet ingredients 1/4 at a time to make a smooth and lump free batter. We also made a berry compote with fresh orange juice, sugar and water, we added a little corn starch slurry to thicken. We used fresh blueberries and blackberries for our compote. We also made a strawberry compote. Our cheese filling used Ricotta, Mascarpone and Cream Cheese. We divided the cheese mixture to make 2 different fillings. Our first filling was orange zest and sugar, we also reserved liquid from our berry compote and added to the cheese mixture to make a berry cheese filling. Our third filling was a savory one with ground sausage, cheddar cheese and white and green onion. We love savory blintzes, so wanted to include this option as well.
