Pickling Wild Chanterelles
With the abundance of mushrooms from our last foraging trip, we wanted to pickle some of the chanterelles to preserve them for the future. It is a simple pickle that yields great results. The key is making sure that you are using fresh mushrooms that have as little water as possible. Dry saute the mushrooms before adding the brine will aid in the pickling process. Brine Recipe: 2 tablespoons of salt 2 cups of vinegar 1/2 cup water 1/3 cup of sugar oregano whole black peppercorns bay leaves #ragnarokprepper #foodpreservation #chanterelles #wildforaging
