Super Soft Steamed Buns/ Vỏ Bánh Bao Mềm, Xốp, Ko Bị Khô Khi Nguội Từ Bột Cái (Video Rút Gọn)

Following many requests, I've remade the video on how to make steamed buns from a starter culture for everyone to easily follow, and I've made a slight change to the measurements. Starter Culture: Dissolve 6g instant dry yeast, 4g sugar, 150g fresh milk, and 150g cake flour (#8 or #11 all-purpose flour will also work). For the best flavor, after mixing, refrigerate for 8 hours or overnight. If you want to make them immediately, let them rise for 40 minutes at room temperature (25°C/75°F). Main Dough: 500g cake flour. #8 or AP-all-purpose flour 80g sugar 1 tsp/5g salt 4g baking powder 1 large egg white - 30g or substitute 30g milk if not using eggs 15g lemon juice 35g lard or light cooking oil 210g fresh milk Total amount of dough Filling - make it according to your own preferences and taste. Use whatever you have at home, mainly add vegetables such as cassava, chopped onion, and mix in the egg yolk from the dough (after separating the egg white) to prevent the filling from drying out. I used: 450g ground lean meat (20% fat) 1 small cup grated corn 3/4 small cup chopped wood ear mushrooms 3 tablespoons chopped shallots 1 tablespoon chopped garlic 1 teaspoon salt 1 teaspoon seasoning powder 1/2 teaspoon pepper 1 tablespoon sesame oil And 1/2 chopped onion + 1 egg yolk - I forgot to turn up the speed on this part Starter 6g instant dry yeast 4g sugar 150g milk + 150g cake flour / low protein contain or All PP flour / Plain flour For the best result, proof the starter in the fridge for 8 hours or overnight after mixing. Or just rise at room temp to x4 time (50 minutes) Main dough 500g Cake flour/ low protein contain or All PP flour / Plain flour 80g sugar 1 tsp/ 5g salt 4g baking powder 1 egg white or 30g milk if don't use eggs 15g lemon juice 35g pork fat or light cooking oil 210g milk All the starters Make the filling as your preference.
