Rich & Creamy: The coconut milk adds a velvety texture that's irresistible. Versatile Use: Ideal as a sauce for pasta, a base for soups, or as a decadent topping. Ingredients & Method: Pumpkin: Baby pumpkin, cut into 1-inch thick wedges 2 tbsp red chilli-garlic chutney 4 tbsp olive oil A sprig of rosemary A squeeze of lemon juice Salt to taste Marinate: Mix all ingredients except the pumpkin to form a marinade. The excess oil, infused with red chilli flavour, is drizzled on the sauce before serving. Cooking Steps: Heat a heavy-bottomed pan with a little oil and grill the pumpkin on each side. Transfer the pumpkin to a roasting tray, rub the red chilli marinate on it, and roast in a preheated oven at 180°C/350°F for 20-25 minutes or until soft and cooked. Coconut Sauce: 1 tbsp vegetable oil 1 tsp mustard seeds 6 curry leaves 1 clove garlic, crushed 1 tsp ginger, chopped 1 tsp green chilli, chopped 1 shallot, sliced 240ml thick coconut milk Salt to taste 1 tsp lemon juice Method: Heat oil in a pan, add mustard seeds and wait for them to pop. Add curry leaves, garlic, ginger, chillies, and shallots; sautĂ© till translucent. Add coconut milk, and salt, and let simmer for 10 minutes. Strain and keep hot, adding lemon juice to adjust the taste. Pumpkin-Pine Nut Salsa: 40g pumpkin seeds 40g pine nuts 1 tbsp olive oil 1 tbsp red onion, finely chopped A squeeze of lemon Salt to taste Preparation: Mix together and set aside.
