Roast Cauliflower & Hummus: A Vegan Must-Try Recipe

Recipe 👇 Hummus: 100g cauliflower, boiled 80g chickpeas, boiled 2 cloves garlic, chopped Salt 2 tablespoons tahini paste 2 tablespoons olive oil Squeeze of lemon juice Place all the ingredients in a blender and blitz to form a smooth paste. Cauliflower: 2 tablespoons olive oil Salt Smoked paprika powder Squeeze of lemon juice Red chilli flakes Cut the cauliflower in the centre to form steaks. Drizzle olive oil, season with salt and smoked paprika powder. Rub on the cauliflower. Heat a heavy bottomed pan and grill the cauliflower on medium heat. Transfer the cauliflower to a roasting tray, drizzle with olive oil, sprinkle red chilli flakes & squeeze lemon juice on it. Roast for 15 minutes in a pre heated oven at 180C/350F. Herb salsa Handful of coarsely chopped coriander ½ cup spring onion, chopped 1 teaspoon red chilli flakes Salt Squeeze of lemon juice Drizzle of olive oil Mix together Garnish : Pomegranate kernels Pine nuts, toasted To serve: Spoon the cauliflower hummus on the plate and spread into a circular manner.
