A fresh appetizer, easy and quick to prepare, given that, despite being a marinated fish, the preparation is quite quick. I think this dish will appeal even to those who don't particularly like this fish, especially because it blends well with its cousin salmon, especially if you use the salmon variety, which is more suitable for this preparation and, in my opinion, even prettier. What do you say? You just can't eat trout? Simple, change the fish: have you tried marinated sea bass yet? Well, it's delicious, and the best part is that the preparation is the same. I recently discovered dry marinating and was immediately fascinated. First of all, it's very practical because the percentage of salt and sugar is the same, and more importantly, the weight of these two ingredients will be equivalent to that of the product being marinated. Secondly, it's very quick because, being so aggressive (and I mean that in a good way), it marinates the meat in a fraction of the time it takes with a liquid marinade. Another thing I love about this type of marinade is that it doesn't overly alter the flavor of the ingredient, and that, in my opinion, is a plus. I find the addition of citrus fruits delicious, enriching the dish and making it more delicious, but be careful not to overdo it. I know the flavor and aroma of orange and lemon can be intoxicating and refined, but you might lose the flavor of the fish. I wasn't satisfied, however, and I thought I'd accompany this dish with something crunchy and even more delicious. I chose a crostini, but a grain one, which I find delicious with fish, and for the creamy part, a lovely and sumptuous mayonnaise, but not the usual one we find everywhere... A lovely aromatic and Mediterranean note is just what you need, so a dozen basil leaves will be perfect for creating a truly balanced dish that will make a great impression on your guests. Oh, I almost forgot: don't be fooled by the fact that it features fish and citrus, making it a quintessentially summery appetizer or finger food. You can already imagine it on your holiday table.
