NOTES: After blending the pistachios for a minute, they will start to stick to the sides of your blender. This is normal. Pause your blender, scrape down the sides, and keep going. You can use any amount of pistachios and white chocolate you want as long as they are equal parts. Just keep in mind that blending time might change a little. Bigger batches usually need a bit more time. When melting your white chocolate, do not leave it too long in the microwave or it will burn. Go for 30 seconds, remove and mix, then microwave again for 20 to 30 seconds. Always mix in between to melt it gently. After making the spread, your pistachio cream will look pourable. It thickens as it cools down and will become solid in the fridge. If you want it softer later, just warm it up for a few seconds in the microwave.
