FRIJOLES REFRITOS YIELD: 1.75 QTS 100g lard 200g white onion, small dice (1 medium onion) 20g jalapeno, split lengthwise (½ a chile) .25g chile de arbol (1 chile) 35g garlic, minced 1 batch of frijoles de la olla or 1 lb of dried beans cooked INSTRUCTIONS Caramelize the onion: In a large skillet or pan, heat the lard over medium heat. Add the diced white onion and cook until deeply caramelized and golden brown. Cook the chiles: Add the jalapeno and chile de arbol to the pan with the onions. Sauté until the chiles soften and become fragrant. Sweat the garlic: Add the minced garlic to the mixture and cook until fragrant and softened, being careful not to brown it. Add beans: Stir in the cooked beans (strained from their cooking liquid). Mash and finish: Mash the beans directly in the pan to your desired consistency. Gradually stir in reserved bean cooking liquid to thin the beans as needed.
