Hey guys! I havenāt posted in a while due to University, my perfectionistic self and the lack of lighting during the winter times. But I guess you guys are used to it by now? I am coming to yāall with your all time favourite: a what I eat in a week. Enjoy xx My usual disclaimer: my diet is not āperfectā and I am not a registered dietician. I love to cook (& to eat) and love to share vegan recipes. I take a B12 supplement. I also donāt show snacks and seconds I take so donāt take the amount youāll see for the exact amount I eat. And last but not least: donāt compare yourself and eat the way that makes your mind and body feel satisfied. Be excited about the food on your plate rather than obsessed. I am sending lots of love. āæ M O N D A Y: Breakfast: Oatmeal with raspberry chia jam, heated blueberries & almond butter (canāt go a week without) my basic oatmeal recipe: 1/2 cup of oats, 1/3 mashed banana, 1 tsp grounded flax seeds or chia seeds or both, lots of cinnamon, 1 cup of water, a splash of oat milk raspberry chia jam recipe: Ā Ā Ā ā¢Ā MEALĀ PREPĀ HACKSĀ |Ā āæĀ veganĀ āæĀ Ā Lunch: Wholegrain seeded bread with hummus & scrambled tofu Hummus recipe: Ā Ā Ā ā¢Ā veganĀ mediterraneanĀ feastĀ Ā Scrambled tofu recipe: Ā Ā Ā ā¢Ā EGGYĀ VEGANĀ RECIPESĀ Ā Dinner: Tofu-Bowls with tofu (cooked with sesame oil & soy sauce), basmati rice, peas, corn, cucumber, avocado, mango, sesame seeds & coriander āæ T U E S D A Y: Breakfast: Yogurt bowl with soy yogurt, kiwi, berries,chia seeds, pumpkin seeds & granola Lunch: Vegan omlette with veggies, cheese, hummus & avo My vegan omlette recipe: Ā Ā Ā ā¢Ā EGGYĀ VEGANĀ RECIPESĀ Ā Dinner: tacos with marinated Jackfruit, charred beans & corn, avocado, coconut yogurt, vegan cheese, red onion, coriander & lime juice Jackfruit recipe: 1 tin of jackfruit 1 (heaping) tbsp tomato paste 1 tbsp soy sauce 1 tsp garlic powder 1 tsp paprika powder 1 tbsp taco seasoning Liquid smoke Rinse and drain the Jackfruit until all the brine is gone. Tap dry and cover with the marinate. Let marinate for at least 1 hour.
