(However, add the oil during the clean-up step.) 3) The standard dough temperature is 27℃. 4) Divide the dough into 50g portions, using approximately 30g of soboro per portion. 5) Prepare and use the soboro for toppings according to the mixing chart. 6) Form the dough into 24 pieces and submit the remaining dough and soboro for toppings separately as directed by the supervisor.
