🍷This recipe for authentic Coq au Vin (chicken stewed in red wine) is easy to make using ingredients you can find at the supermarket, yet has the deep richness and aroma of French home cooking. 🍲The savory flavor of chicken thighs, the savory bacon, and the fragrant mushrooms are combined with the richness of red wine, making it a perfect pairing with baguette, mashed potatoes, or white rice. It's perfect for everyday dinners, making food in advance, or as a French meal for special occasions! 🍗 [Ingredients (Serves 4)] 1kg chicken thighs (bone-in or boneless is fine) 80g bacon (thick-sliced) 1 onion (largely cut) 8-10 mushrooms (cut in half; maitake or shimeji mushrooms are also fine) 2 cloves garlic (coarsely chopped) 1 tablespoon tomato paste 1 tablespoon oil 2 teaspoons flour 300ml red wine (dry) 250ml water 1 tablespoon chicken consommé (granulated) 1 teaspoon dried thyme 1 bay leaf Salt and black pepper to taste 📝 [Procedure] 1. Remove excess skin, fat, and cartilage from the chicken thighs and cut them into 8 large pieces. Sprinkle generously with salt and black pepper on both sides. 2. Roughly chop the onion and halve the mushrooms. Coarsely chop the garlic. Cut the bacon into thick slices. 3. Heat a large pot or frying pan over medium heat and add 1 tablespoon of oil. Add the bacon and fry for about 5 minutes until browned all over, then remove from the pot. 4. Next, arrange the chicken skin-side down and cook for about 4-5 minutes without moving it. Flip it over and cook the other side for 2 minutes, removing it once it's nicely browned (it doesn't need to be cooked through). 5. Add the onion, mushrooms, and a pinch of salt to the same pot and cook over medium heat for about 6 minutes. Scrape up any flavor remaining on the bottom of the pot with a wooden spatula and cook until the onion is soft and the mushrooms are browned. 6. Add the garlic and cook for a further 1 minute, then add the tomato paste and mix well. Next, add the flour and stir-fry for about 1 minute to remove any powdery texture. 7. Add 300ml of red wine and bring to a boil over high heat, scraping up the flavorful ingredients from the bottom of the pot. Boil for about 5 minutes to evaporate the alcohol. 8. Add 250ml of water, 1 tablespoon of chicken consommé, 1 teaspoon of dried thyme, a bay leaf, and the fried bacon. Place the removed chicken skin-side up and return the juices to the pot. 9. Reduce the heat to low, cover, and simmer for 30 minutes. 10. Remove the lid and simmer for a further 5-10 minutes to thicken the sauce. Taste and finish with salt and black pepper. Done! We recommend serving this with baguette, mashed potatoes, or rice.
