Add eggs in a saucepan, pour in cold water, and bring to a boil, turn off the heat, cover the saucepan, and let them leave for 15 minutes. Then, cool the eggs in ice water and peel them. 2. Cut the potatoes into 1 cm cubes, rinse in cold water, place in a saucepan, cover with water, bring to a boil over medium heat, reduce the heat to low, and cook for 7-10 minutes. Towards the end of cooking, season with salt to taste and check for doneness with a fork. Drain on a colander after cooking. 3. In a salad bowl, combine the boiled potatoes, diced hard boiled eggs, finely chopped onions, celery, pickled cucumbers, and scallions. 4. In a separate bowl, mix mayonnaise, dijon mustard, apple cider vinegar, paprika, black pepper, salt. Add potato salad dressing to the salad bowl with the vegetables and mix well. 5.
