These are incredibly soft and light potato fritters that melt in your mouth: you can fill them with granulated sugar and sweet creams, or serve them as an appetizer with cheeses and cured meats. Everyone will surely enjoy them! This recipe yields 14 fritters. Sweet and savory fritters with a single dough In the masterclass dedicated to this marvel, we'll discuss how to make a single dough and have an endless variety of recipes depending on your fillings and toppings! For the sweet version, you can fill them or cut them in half and fill them with custard, hazelnut cream, chocolate cream, or simply dip them in granulated sugar after they've been fried (my favorite)! For the savory version, you can use anything: cured meats, cheeses, grilled vegetables... If you want to know, my savory favorites are with pecorino and honey! Potato Fritters with Yeast The yeast version may seem elaborate and time-consuming—I thought so too, Family—but you have two options to choose from to optimize your time! In both cases, the mixture should rise and form bubbles on the surface! 12-hour rise in the refrigerator: prepare it the night before and leave it in the refrigerator, then take it out an hour before kneading to let it come back to temperature and start kneading. 4-hour rise outside the refrigerator: prepare it in the morning and leave it in the oven, well covered. Potato Fritters with Dry Yeast You know, Family, I prefer fresh yeast, but if you want to use dry yeast, you can certainly do so: the amount is 4 grams. This recipe is part of our masterclass!
