MASTER COOKBOOK RECIPE # 530 CHICKEN NUGGETS OR TENDERS Ingredients: chicken breast whole butter milk **Chicken is cheaper on the bone. Buy it when it is on sale and cut the breast meat from the bone. Cut into 1” strips. If making nuggets, cut into 1” pieces. Soak chicken in buttermilk for 20-30 minutes at room temperature before frying. 1-1/2 cups of self-rising flour 1 tsp black pepper 1-1/2 tsp salt 2 tsp paprika 1-1/2 Tbsp Hidden Valley Ranch mix Instructions: Add the dry ingredients to a shallow dish and whisk thoroughly to combine. Place the chicken in the dish and turn to coat it evenly with flour and seasonings. Press flour onto chicken well. Let it rest for 10 minutes before frying. This helps the crust adhere better. Put oil about 1” deep in the skillet. Heat until a small piece of crust floats and sizzles. Fry tenders: 3 minutes each side. Fry nuggets: Cook for 4 minutes if deep frying, or two minutes per side. If you cut larger nuggets, cook longer. Remove the chicken and place it on a wire cooling rack with parchment paper or paper towels underneath to catch the oil. Serve with Recipe #603 Honey Mustard or Recipe #599 Dippen Chicken Sauce (see below). Serve with chicken, pork, fish, or seafood. Store in the refrigerator. MASTER COOKBOOK RECIPE # 599 DIPPEN CHICKEN SAUCE Ingredients: 1/2 cup mayonnaise 1/2 tsp pepper 1/4 cup ketchup 1 tsp Worcestershire sauce 1 tsp garlic powder 1/4 tsp cayenne pepper, optional Instructions: In a glass bowl, combine all ingredients and blend well. Serve with chicken, pork, fish, or seafood. Best if made the day ahead. Store in the refrigerator.
