Culinary Highlight - Hilo Beverly Hills

Back in August of 2025, my editor and I slipped into the kitchen to pick Chef Hilo’s brain — to see what sparks his creativity, and how, in just a few short years in Beverly Hills, he’s built a clientele stacked with Hollywood heavy-hitters. 1) Kumamoto oysters — one dressed with his herbaceous signature sauce, another with a clean ponzu that lets the oyster speak for itself. 2) Then there’s Hilo casually sharpening his knife on the porcelain grain underneath his dishes. No fuss, no theatrics — just a quiet flex that clearly works for him. 3) What makes Hilo unique: he brings his Hawaiian roots straight to the counter, working with fish like Kahala and ʻŌpakapaka.
