Heat 1 tablespoon of olive oil in a pot. Meanwhile, finely slice the onion. Add the onion slices and then the cherry tomatoes to the hot olive oil, reduce the heat, and sauté for about 10 minutes with the lid on. In the meantime, heat 1 tablespoon of olive oil in a second pot. Thinly slice the green bell pepper and the garlic clove. Sauté both in the hot olive oil. Strip the rosemary needles from the sprig and toast them in the olive oil, season with 1 tablespoon of Italian seasoning, and continue to toast for another 30 seconds. Pour in 400 ml (1 1/2 cups) of water, add the polenta, stir, season generously with salt, and wait until the polenta thickens. Roast the polenta in a pot, stirring constantly, for about 5 minutes, until it forms a ball. Line a baking sheet with parchment paper and place the ring of a springform pan on top. Brush the inside of the ring and the parchment paper with 1 tablespoon of olive oil. Place the polenta ball in the ring and press it down to distribute it evenly and shape it. Then remove the ring from the baking sheet. Season the tomatoes generously with seasoned salt, pepper mix, and 1 tablespoon of Italian seasoning. Then crush them with a wooden spoon and mix everything well. Increase the heat again and simmer for about 1-2 minutes, stirring occasionally. Stir in the butter and remove the tomato sauce from the heat. Spread the tomato sauce evenly over the polenta. Scatter roughly torn basil leaves and mozzarella slices over the tomato sauce.
