Today I cooked Japanese curry at home — solo, with baby Yuu-chan by my side 🍛🍼 My husband works 6 days a week from 7am to 11pm, so most days it's just the two of us. Getting Yuu-chan to sleep, cooking with her in the carrier, taking coffee breaks together… it took 3 hours from start to finish, but we made it! 😂 🍛 Japanese-Style Beef Curry (Serves 4–5 / ~¥1,000) Ingredients: ・Beef – 250g ・Onion – 2, sliced ・Carrot – 1, cut into pieces ・Potato – 2 (optional; if using, reduce the other vegetables a little) ・Water – 750ml ・Japanese curry roux – 1 block (I recommend Golden Curry or Vermont Curry!) ・Oil – as needed Instructions: Sear the beef until browned. Add carrot and onion, sauté until softened. Add 750ml water, bring to a boil, and skim the foam. Simmer 15–20 min until vegetables are tender. Add curry roux and stir until dissolved. Simmer 5–10 more minutes until thickened.
