EASY Egg Frittata | Vineet Bhatia Recipes

Egg Frittata 2 eggs, whisk & season with salt & red chilli flakes 1 medium size potato, peeled & sliced into 3mm thickness Salt Red chilli flakes 2 tablespoons black olive slices 2 tablespoons green pepper dices 2 slices of mature cheddar cheese Oil Pour oil in a cast iron pan or a heavy bottomed pan. Arrange the sliced potatoes on the bottom of the pan. Sprinkle salt, red chilli flakes & drizzle oil. Heat the pan and cook till the potatoes turn golden brown, do not stir the potatoes. Lower the heat. Top the potatoes with black olive slices, diced green peppers, sliced cheddar and cover with a lid to cook the vegetables and melt the cheese. Pour in the seasoned eggs, lightly tap the pan to ensure the egg spreads evenly and there are no air bubbles. Cover with a lid and cook until the eggs firm up & cook.
