Today, we are making the ultimate batch of Sikhye, a beautifully sweet and refreshing traditional Korean rice drink. 🌾✨ Often served as a dessert to aid digestion, Sikhye is a staple at Korean holidays. It might seem intimidating, but using a rice cooker makes the fermentation process incredibly easy! In this video, I’m sharing all the secrets—from how to make your rice grains float perfectly on top, to controlling the clarity and depth of your Sikhye broth. For more authentic Korean recipes and step-by-step guides, visit tastekoreanfood.com! 😊 [Ingredients] Main: 350g (12.3 oz) Barley malt powder, 2 cups Short-grain white rice, 1.5 cups Sugar (adjust to taste), 2 knobs (60g) Fresh ginger, 5L Lukewarm water Garnish (Optional): A few pine nuts, 1 Jujube (Dried red date) [Quick Instructions] [Prep & Extract Malt Water] Peel and thinly slice the ginger. Place the barley malt powder into a cotton straining bag and tie it tightly. Submerge it in 5L of lukewarm water and knead vigorously to extract the milky malt water. [Cook Rice] Cook the short-grain rice in a rice cooker with slightly less water than usual (1.5 cups of water) to make hard-boiled rice. [Ferment] Leave the cooked rice in the cooker. Pour the extracted malt water up to the 'Max' line, add the malt bag, and break up any rice clumps. Set the rice cooker to "Keep Warm" for 5 to 6 hours. [Separate Grains for Garnish] Once 5-10 rice grains float to the top, the fermentation is done. Scoop some grains out, rinse them in cold water to remove the sweetness, and store them in the fridge. (Add these right before serving so they float beautifully!) [Boil] Pour the fermented mixture into a large pot (5L+). Add the remaining malt water. (💡 Tip: For a clear broth, only use the top liquid. Bring to a boil, stirring constantly while skimming off any foam that rises. [Sweeten & Finish] Once boiling, reduce to medium-low and simmer for 10 minutes. Remove the malt bag (squeeze out the liquid back into the pot). Add 1.5 cups of sugar and boil until dissolved. Turn off the heat, remove the ginger pouch, and let it cool completely. [Serve & Store] Serve the chilled Sikhye in a bowl. Top with the reserved rice grains, pine nuts, and sliced jujube. Store any leftovers in the freezer to keep them fresh!
