【チキンビリヤニ】インド・コルカタで食べた絶品ビリヤニを再現してみた
I tried to recreate the biryani I ate in Kolkata, India. Kolkata chicken biryani is all about potatoes!! The extra-large potatoes, thoroughly infused with the sauce, are absolutely delicious. Ingredients (3-4 minutes) ▼Meat portion ・Chicken thigh meat 300g ・Potatoes 2 (160-180g) ・Onion 1/2 (100g) ・Cherry tomatoes 4 (40g) ・Garlic 2 cloves (grated) ・Ginger 2 cloves (grated) ・Water 200ml ・Milk 2 tablespoons ・Vegetable oil 2 tablespoons ・Salt 1 teaspoon A. Whole Spices Cardamom 5 pods Cloves 5 pods Cinnamon 5cm Black peppercorns 10 grains Star anise 2 pods Cumin seeds 1 teaspoon Powdered Spices Cumin 2 teaspoons Coriander 2 teaspoons Chili pepper 1/2 teaspoon Turmeric 1/2 teaspoon ▼ Rice Part Basmati rice 200g (wash and soak for 30 minutes) Water 1.5L Salt 1 tablespoon B. Whole Spices Cardamom 5 pods Cinnamon 5cm Cloves 5 pods Optional Meeta attar a few drops ▼ Meat Part ① Heat oil in a frying pan and add A. Whole Spices. ② When the cardamom pods start to swell, sauté the onions. (Making Fried Onions) ③ Once the onions start to brown, sauté the cherry tomatoes, garlic, and ginger. ④ When the tomatoes have started to break down, add the meat, powdered spices, and 1 teaspoon of salt and sauté lightly. ⑤ Add 200ml of water, milk, and potatoes. Once it boils, cover and simmer for about 30 minutes. (Check periodically to make sure the water level isn't too low. The final amount of broth should be about 5mm from the bottom of the pot.) ▼Rice Part ⑥ Bring 1.5L of water, 1 tablespoon of salt, and whole spices to a boil. Add the well-drained rice and cook for 6 minutes. Start the timer as soon as you add the rice. ⑦ After 6 minutes, drain the water well using a sieve and place the cooked rice on top of ⑤. Drizzle with Meeta Atta if desired. ⑧ Cover and cook over medium heat for 1 minute, then low heat for 15 minutes, then turn off the heat and let it steam for 15 minutes. --- Easy even for beginners!
