In this episode, we're making Tori Teriyaki (Chicken Teriyaki). Teriyaki is a Japanese classic where a balanced sweet and salty sauce gives chicken a glossy coating. The word "teri" itself means shine. Why chicken legs? The skin-on thigh is juicier and more flavorful than the breast. You don't need much fat; the skin will naturally release some of the excess fat. Slightly opening up the thicker parts will help them cook faster and more evenly. Teriyaki sauce (the logic behind it in the video): Some water Hondashi (or bouillon if you prefer) Mirin Soy sauce As the sauce thickens, it adheres to the surface of the chicken, creating that glossy teriyaki look.
