When using other rice flours, adjust the amount accordingly based on the dough's condition. [Recipe] Preparation ・Measure out 50g of pizza cheese. ・Place a plastic bag in a bowl. *Thin bags may tear or be difficult to mix, so use a thick one. Making the Dough 1. Add the rice flour, potato starch, salt, and baking powder, and shake the bag to mix. *The potato starch helps the dough hold together and improves the texture. 2. Add the plain yogurt, honey, and rice oil, and mix well. 3. Once the flour is gone, add half of the pizza cheese and mix until evenly distributed. 4. Gather the dough together and place it in the center, then cut two sides of the plastic bag with scissors. Divide the dough into thirds, trying to get as much of the dough as possible stuck to the bag. Shaping 5. Lightly oil a frying pan and mix well. Coat your hands with a light layer of oil as well. Knead a little, then roll into balls, lightly flatten, and make a hole in the center. 6. Once shaped, arrange the dough on top of the frying pan. *The dough will expand slightly, so leave some space between each. Add 50mL of water and cover with the lid. Bake 7. Steam-bake over low-medium heat for 4-5 minutes. When most of the water has evaporated, open the lid and arrange the dough on a baking sheet lined with non-stick aluminum foil. *If you cook the dough until all the water has evaporated, the bottom will burn, so turn off the heat a little earlier. 8. Top with the reserved cheese and bake in the toaster's toast mode (250°C) for 4-6 minutes, or until golden brown. *If the bread looks like it's cooking unevenly, switch sides. Remove the bread from the oven onto a wire rack and let it cool slightly.
