Qatayef Ramadan Recipe (English)

Qatayef is a beloved dessert traditionally enjoyed during the holy month of Ramadan. These delicious treats can be stuffed with a variety of fillings, including cheese, mixed nuts, cream (Qishta), or dried fruits. In this recipe, I'm excited to share two of my favorite fillings: cheese and coconut-walnut. Qatayef can be baked or fried to perfection and finished with a dip in fragrant orange blossom syrup. Ingredients:‎ Dough:‎ ‎3 cups lukewarm water‎ ‎2 cups flour‎ ‎1/2 cup semolina‎ ‎2 tbsp baking powder ‎2 tbsp sugar‎ Blend for 2-3mins Set aside for at least 15-20mins‎ Walnut stuffing:‎ ‎1 cup crushed walnuts‎ ‎3 tbsp raisins (optional)‎ ‎2 tbsp coconut flakes‎ ‎2 tbsp sugar‎ ‎1/2 tsp cinnamon‎ ‎2 tsp orange blossom water‎ Cheese stuffing:‎ ‎1 cup cheese Akawi, mozzarella or mix of both‎ ‎1/2 tsp cinnamon‎ ‎1 tsp orange blossom water Orange blossom syrup:‎ ‎2 cups water‎ ‎3 cups sugar‎ ‎1 tsp lemon juice‎ ‎2 tbsp orange blossom water‎ Pistachios for garnish Enjoy!
