No complicated dough or store-bought dough required. We make simple tortillas and a finger-licking good filling, and then enjoy them because they're delicious! You'll love them. DOUGH INGREDIENTS: 500 ml water = 2 cups = 1/2 liter 2 cups all-purpose flour = 280 g = 14 tablespoons 100 g cornstarch = 7 tablespoons 1/2 teaspoon salt FILLING INGREDIENTS: 250 g cooked chicken breast, cut into thin strips 1 onion, thinly sliced 150 g carrots, very thinly sliced 150 g celery stalks, very thinly sliced 200 g cabbage, very thinly sliced 100 g fresh or canned bean sprouts 2 cloves garlic, crushed 3 tablespoons soy sauce Salt and freshly ground black pepper to taste PREPARATION: In a frying pan or wok, add a drizzle of oil, then add the onion and crushed garlic. Sauté for 1 minute. Add the carrot and celery and sauté for at least 2 minutes. Add the cabbage and mix. Season with salt, pepper, and ginger (if desired). Mix well and sauté for 5 minutes. Add the chicken and bean sprouts, and sauté for another 2 minutes, stirring occasionally. Transfer to a separate container and let cool. Place all the ingredients in a blender and blend until smooth. Transfer to a container and let rest for a few minutes. Reserve a small amount of the mixture to use as a binder for the spring rolls. Place a non-stick pan over medium heat and let it warm slightly. Using a pastry brush, lightly coat the bottom with batter until it's completely covered. Cook for 1 minute, then flip and cook for another 30 seconds. The batter should remain fairly white. Repeat this process with all the batter. Place a spoonful or a little more filling on each tortilla. Fold the edges over to enclose the filling. Brush the sides and the end with the reserved batter, then roll tightly. Repeat with all the tortillas. Heat oil in a pan until it's hot but not too hot. Add the rolls, a few at a time, so they fry evenly. When they are golden brown on all sides, they are ready. Remove them from the oil and drain them.
