Shavige Vermicelli Upma Recipe (Vegetable Semiya Upma) Ingredients 2 cups roasted vermicelli (shavige/semiya) 2 tbsp oil 1 tsp mustard seeds 1 tsp cumin seeds (optional) 1 tsp urad dal 1 tsp chana dal 8–10 cashew nuts (optional) 2 green chilies, finely chopped 1-inch ginger, finely chopped 8–10 curry leaves 1 medium onion, finely chopped ½ cup carrot, finely chopped ¼ cup green peas ¼ cup beans, finely chopped Salt to taste 3½–4 cups hot water 2 tbsp coriander leaves, chopped 1 tbsp lemon juice Method Step 1: Roast the Vermicelli If using unroasted vermicelli, dry roast it on medium heat for 4–5 minutes until light golden. Keep aside. Step 2: Prepare the Tempering Heat oil in a kadai. Add mustard seeds and let them splutter. Add cumin seeds, urad dal, chana dal, and cashew nuts. Fry until the dals turn golden. Add green chilies, ginger, and curry leaves. Sauté for 30 seconds. Step 3: Cook the Vegetables Add chopped onions and sauté until translucent. Add carrots, beans, and green peas. Cook for 2–3 minutes. Step 4: Add Water Pour in 3½–4 cups of hot water. Add salt and bring it to a rolling boil. Step 5: Cook the Vermicelli Gradually add the roasted vermicelli while stirring continuously. Mix well to avoid lumps. Step 6: Simmer Cover with a lid and cook on low flame for 5–7 minutes until the vermicelli becomes soft and all the water is absorbed. Step 7: Finish Add lemon juice and chopped coriander leaves.
