SPICY AND SOUR FISH INGREDIENTS 1 8 shallots 4 cloves of garlic 3 candlenuts 3 teaspoons chili powder (equivalent to 9 red chilies) 1/2 teaspoon turmeric powder 3 cm ginger 4 tablespoons water INGREDIENTS 2 750 grams mackerel (cut into rounds) 3 starfruit (sliced) 2 pieces of tamarind (kandis) 5 cm galangal 1 stalk lemongrass 2 bay leaves 3 kaffir lime leaves 1 turmeric leaf 800 ml water 1.5 teaspoons salt 1/2 teaspoon granulated sugar 4 tablespoons oil (for sautéing) HOW TO MAKE 1. Chop ingredient 1 until smooth, then sauté in oil until cooked. 2. Add tamarind (kandis), galangal, lemongrass, bay leaves, kaffir lime leaves, and turmeric leaves. Stir well. 3.
