Ingredients: 4 chicken breast fillets; A pinch of sweet paprika; A pinch of hot paprika; Salt and pepper to taste; Extra virgin olive oil; 100g coarsely grated mozzarella cheese (for finishing); For the sauce: 1 diced Italian tomato; 1 finely chopped onion; 2 finely chopped garlic cloves; 300ml tomato passata or peeled tomatoes or tomato sauce of your choice; 100ml hot water; 1 bay leaf; 2 sprigs of fresh thyme; 1/3 cup dry white wine; Extra virgin olive oil; For breading: 2 eggs; 1 cup all-purpose flour; 1 cup panko breadcrumbs or breadcrumbs; Salt to taste; Preparation method: 1. Season the chicken fillets with a drizzle of olive oil, salt, black pepper, sweet paprika, and hot paprika; let marinate for 30 minutes. 2.
