Ingredients: 4 chicken breast fillets; A pinch of sweet paprika; A pinch of hot paprika; Salt and pepper to taste; Extra virgin olive oil; 100g coarsely grated mozzarella cheese (for finishing); For the sauce: 1 diced Italian tomato; 1 finely chopped onion; 2 finely chopped garlic cloves; 300ml tomato passata or peeled tomatoes or tomato sauce of your choice; 100ml hot water; 1 bay leaf; 2 sprigs of fresh thyme; 1/3 cup dry white wine; Extra virgin olive oil; For breading: 2 eggs; 1 cup all-purpose flour; 1 cup panko breadcrumbs or breadcrumbs; Salt to taste; Preparation method: 1. Season the chicken fillets with a drizzle of olive oil, salt, black pepper, sweet paprika, and hot paprika; let marinate for 30 minutes. 2. For the sauce: In a saucepan over low heat, add a drizzle of olive oil and the garlic. 3. When it starts to brown, add the onion and a pinch of salt and let it brown. 4. Add the tomato and mix. 5. Add the dry white wine and let it reduce and evaporate. 6. Add the tomato passata and a pinch of salt. 7. Add the water, bay leaf, and thyme sprigs. 8. Let it cook and enhance the flavors over medium heat for 5 minutes. 9. For breading: 10. Arrange the eggs, wheat flour, and panko breadcrumbs on separate plates. 11. Coat the steaks in wheat flour, then in beaten eggs, and finally in panko breadcrumbs. 12. In a non-stick frying pan, add a generous drizzle of olive oil and grill until golden brown on both sides. Assembly: 1. In an oven-safe dish, add the mashed potatoes from the recipe in the channel, lining the sides and leaving a hole in the center. 2. Add sauce to the center. 3. Then add the grilled fillets, cut in half. 4. Add more sauce. 5. Finish with grated mozzarella cheese. 6. Bake in a preheated oven at 200 degrees Celsius (390 degrees Fahrenheit) or on the broil setting until the cheese melts and browns. Remove from the oven and serve hot.
