How to make Ginger Candy? This is an easy recipe for making ginger chews/ candied ginger/ crystallized ginger. This candy is one of my favorite snacks to munch on throughout the day. Prep Time: 5 min Cook Time: 1 hr Total Time: 1 hr 5 min Yield: ±200 grams Ingredients 200g old ginger 80g sugar Instructions Wash, peel and cut the ginger into thick slices. Put water (1000g) into a pot. Bring it to a boil. Add ginger. Lower the heat, cover the pot and simmer the ginger for 30 minutes. Scoop up the ginger with a sieve. Add sugar immediately and stir until the sugar dissolves. Allow it to cool. Cover and let it sit in the refrigerator overnight. Put everything into a saucepan. Bring it to a boil. Turn the heat to low and stir frequently until most of the liquid evaporates and the sugar crystallizes, approximately 30 minutes. Remove from heat and leave to cool.
