Hiraku Ogura: Fermentation designer. Aiming to "make the invisible work of fermentation bacteria visible through design," he collaborates with brewers and researchers across Japan on projects themed around fermentation and microorganisms. After studying fermentation as a research student at Tokyo University of Agriculture, he built a fermentation lab on the mountain in Yamanashi, where he cultivates bacteria daily and explores the world of microorganisms. In April 2020, he opened the "Fermentation Department" store in Shimokitazawa. In 2024, he will produce the "Fermentation Culture and Arts Festival" in Kanazawa. His publications include "Fermentation Cultural Anthropology," "Japanese Fermentation Journey," "Ossu! Food Country: Delicious Japan," and "Asian Fermentation Journey." He is also a personality on YBS Radio's "Fermentation Brothers' COZY TALK" and the podcast "#CurrentlyFermenting."
