Hi folks! This week we've got: Pazham Pori | Ethakka Appam | Vaazhakka Appam | Kerala Banana Fritters 'Pazham' refers to banana and 'pori' means fried stuff. So pazhampori translates to 'fried banana' or 'banana fritters'. Enjoyed by people of all ages, pazhampori is considered as one of the best accompaniments to evening tea or coffee. It is also quite enjoyed as a breakfast item. Hope you try this out and enjoy it too. INGREDIENTS: • Ethakka pazham or Nendran banana: 2-3 sliced length wise • Maida (all-purpose flour): 1.5 cups • Rice flour: 1/2 cup • Sugar: 3-4 teaspoons • Salt: 1/2 teaspoon • Turmeric powder: 1/2 teaspoon • Crushed cardamom: 1/2 teaspoon • Water: 3/4-1 glass • Oil for frying (preferably coconut oil) RECIPE: • In a bowl, mix maida, rice flour, sugar, salt, turmeric powder and crushed cardamom powder. • Gently whisk and in water gradually till you get a batter that is lump free, thick yet pourable. • In a kadhai or wok, heat oil for frying the fritters. Use coconut oil to get that authentic taste. • One by one pick up the plantain slices and coat them properly with the batter and drop them in medium to hot oil. • Do not be in a hurry to flip them. Allow them to cook and get a nice crispy outer covering. Flip occasionally to get the perfect golden brown colour. • Your crispy on the outside and juicy on the inside ethakka appams are ready to be enjoyed with a cup of hot tea or coffee.
