With sweet potato and tapioca flour on the ingredient list, the recipe is simple and easy to prepare. Here's how: INGREDIENTS Kisse Bread 150 grams of sweet potato 2 cups of sour tapioca flour 1 cup of sweet tapioca flour 1 teaspoon of salt 1 teaspoon of curry powder 250 milliliters of water 1 tablespoon of olive oil PREPARATION Kisse Bread Peel and chop the sweet potato and place in a saucepan, add water, and bring to a boil. When the potato is cooked, discard all the water and mash the potato into a purée, set aside. In a bowl, add the sour tapioca flour, sweet tapioca flour, salt, and curry powder. Add 250 milliliters of water to the pan and add the olive oil. Heat over heat. Once hot, turn off the heat and add it to the dry ingredients in the bowl, stirring well. When hot, the dough will have a gelatinous texture and be difficult to mix. Add the mashed sweet potato and work the dough until all the ingredients are incorporated. Transfer to a counter and knead the dough until it comes away from your hands. Return the dough to the bowl and cover with a tea towel. Let it rest for 30 minutes. Preheat the oven to 180 degrees Celsius. After resting for 30 minutes, shape the dough into balls of the desired size, as they will double in size after baking. Line a baking sheet with nonstick paper and arrange the balls on the baking sheet. Bake for 30 to 40 minutes, or until golden brown.
