However until quite recently the only specialist cheeses available in the country came from Europe. Over the past two decades all that has changed thanks to a small group of passionate farmhouse cheese makers who have developed a unique range of Australian cheeses from cow, goat, ewe and buffalo milk. Will Studd has been at the forefront of this change and travels to meet five of the original pioneers in Gippsland and Western District Victoria, Tas-mania and Western Australia.
