ANGLO-INDIAN DOLL CURRY WITH POWDERED RED LENTILS / MASUR DAL 500 grams Red Lentil / Masur Dal 1 onion sliced 2 tomatoes chopped A few curry leaves A handful of chopped coriander leaves 1 teaspoon chillie powder 2 teaspoons coriander powder 1/4 teaspoon turmeric powder 1/2 teaspoon mustard seeds 1 teaspoon cumin seeds Salt to taste 1.5 tablespoons oil Method Rinse and dry the red lentils and leave to dry on a kitchen towel When almost dry, dry roast the lentils in a pan on medium heat. Leave aside to cool then grind to a powder in a blender. Heat the oil in a pan. Add the mustard and cumin seeds. When they begin to splutter, add the sliced onion and fry till translucent. Next add the chopped tomatoes and fry till soft. Make a paste of 3 tablespoons of the lentil powder with some water and add to the pan. Fry for a few seconds then add the chillie powder, coriander powder and turmeric powder and sauté for a few minutes. Add 2 or 3 cups of water and mix well until there are no lumps. Add salt and chopped coriander. Simmer on low heat for about 8 to 10 minutes. Then switch off the heat. Garnish with chopped coriander leaves #angloindian #redlentilsoup #masurdal
